After losing her job when Brisbane’s award-winning restaurant Arc Dining closed at the start of the pandemic, Ceri Kidby-Salom (Alba Bar and Deli, Brisbane) took a moment to pause and reflect on her time in the industry, what she wanted to get out of and, importantly what she wanted to put into the industry.
