After starting his apprenticeship at the age of 19 at Matteos Restaurant, Darren Mercaldi (Mamasita, Hotel Jesus) rose the ranks quickly to become a head chef at the age of 23. But as he soon discovered the role is far from being a great cook, and found it challenging to find ways to get the best out of his staff without crossing the line.
