After building the team and creating what became one of Australia’s best regional restaurants, Lachlan Colwill (Omotenashi) felt burnt out and began to feel like he wasn't being true to himself. He downed tools and left South Australia to Tasmania for some soul searching and discovered an oasis of extraordinary produce and creative opportunity.
