Growing up in the Fleurieu Peninsula, Thomas Campbell (Thelma) was surrounded by food and produce, a lot of which stemmed from Greek Cypriot grandparents. After asking for a job at Adelaide’s Africola, the commercial food world opened before his eyes and soon enough he climbed the ranks in some of Britain’s and South Australia’s most forward-thinking venues.
