Trudy’s Amazing Pavlova 8 egg whites 16 oz caster sugar (454 grams) 1 tsp brown vinegar Beat egg whites until they form stiff peaks (4 minutes approx.) Slowly add sugar Will be white and silky (beat for approx. 10 minutes) At the last minute add the vinegar and combine Bake on foil covered tray in a slow oven (160degrees C) for 1 hour. Test with skewer Top with whipped cream and fruit / nuts / curd or chocolate of your choice.
