喜马拉雅的听众朋友们大家好,这里是槟客文化,欢迎收听香槟知识一百问,带你从香槟小白变身香槟达人。如果您仔细留意过香槟的酒标,会发现酒标上标有Brut, Extra Brut, Demi-Sec 等等的字样,看一下中文的背标,解释成天然型,超天然型,半干型等等。今天这期节目,我带大家来了解一下,这些词的背后的真正含义。首先涉及到“补糖液”一词,指的是向刚除渣完的香槟中添入的液体,其主要成分是基酒和糖。为什么需要补糖呢?在前几期的节目中提到过,香槟除渣的时候,瓶内的压力使瓶口被冻住的酒液以及酵母残渣一起喷出,会损失一部分酒液。所以补糖这个步骤一方面是补充流失的酒液,一方面是香槟酒本身的酸度偏高,为了保证口感平衡就要从外部调少量糖份与之融合。另外,很多人聊到葡萄酒都会谈到一个词“残糖量”,但其实在香槟酒的世界这个词很少会被提及。香槟酒口感的甜度大半是有补糖量决定的,正常情况下发酵过程中残留的糖分非常少,不会超过3克/升。所以,讨论一款香槟口感是不是甜型,或者讲解香槟的时候,要注意使用词汇;“补糖量”,才更精准专业!根据2010开始实施的补糖量法规,香槟酒标上标注的补糖量必须遵守以下规定:Brut Nature(自然):残糖量<3 g/L,而且酒中没有添加任何糖分的,我们可以称之为Pas Dosé(未添加)或者Dosage Zéro(零添加)。Extra brut(超天然):0≤补糖量<6g/LBrut(天然):补糖量<12 g/LExtra dry(绝干): 12 g/L≤补糖量<17 g/LSec(干): 17 g/L≤补糖量<32 g/LDemi-Sec(半干): 32 g/L≤补糖量<50 g/LDoux(甜):补糖量≥50 g/L今日教大家一下香槟类型的法语发音,Brut,你学会了吗?如果听友们有关于香槟知识的小问题,欢迎在评论区互动,也可以关注“槟客文化”公众号,发现更多香槟的资讯。槟客文化原创文章,未经同意严禁转载。
