So what will happen is they'll they'll have a restaurant. A new immigrant will come to town, probably a hub city. I think they concentrated on New York, San Francisco and Chicago for the article.

Oftentimes outside of city centers, you can get paid more, which sort of surprised me. I guess it makes sense, though. But if you're getting Chinese food for years and years from the same place, a lot of times there will be a different cook every few months, and hopefully you won't even notice.
