Grunkmeier completed 23 of 44 passes in the win.
East Carolina, meanwhile, beat Pittsburgh 23-17 in the military bowl.
Army beat Connecticut 41-16 while BYU slipped past Georgia Tech 25-21 and Fresno State beat Miami of Ohio 18-3.
And North Carolina State dominated Memphis this evening, while North Texas beat San Diego State 49-47.
