So we wrote a paper in 2019. And this actually was pretty fun for me. It came from working with the chefs. The chefs were working on that protein flip idea that I mentioned earlier, and they were a little worried. They said, what is the thing about the plants missing the amino acids or being incomplete?

And so I knew a lot about this, but to make a slideshow for them that day, I did something I had never done before, and I got a whole bunch of foods, and I plotted out the amounts of every single amino acid in the food in the proportions they were in.
