Okay, so kelp is a type of seaweed.

very cool that's very cool and this agar agar that we have on the table um there are a few interesting things about that so you know the bubbles in bubble tea they're usually made of tapioca but you can make them out of this as well okay and so you can get special ones that have this in and also the way that you make it is you get the seaweed and then you put it on the beach
and then you dry it off, and then you freeze it, and then you thaw it again, and then you freeze it, then you thaw it again.
But this was discovered accidentally by a Japanese innkeeper in 1658 when he accidentally left it outside on a frosty morning, came back, it was frozen, thought, oh, no, I'm going to have to bring that in, and then made the same mistake for day after day after day and kept freezing it and then found that it had got rid of a lot of the impurities and that they could make proper agar jelly out of it.
His family is saying, can you please bring in that seaweed?
I think sometimes you just have to add some whimsy to these ideas.
Otherwise, people are not going to go for them.
