Because why would you want to do a medium well?
Medium well, you can't even taste it.
It just tastes like charcoal.
The only thing I can think of is that restaurants started making medium rare more rare.
So people started ordering medium, which is the new medium rare.
But I think that most people like a little bit of pink in the middle of their steak.
Let me ask you this.
What is your definition of medium?
Because pink to me is where the flavor comes from.
Now, the other caveat here is this.
If it comes out too rare, you can send it back and say, can they cook it a little more?
If it comes out too well done, then you got to ask for a whole new steak.
