So firstly, as an author, I love food. I want to comment that when I was a child, what I heard most often from people was commenting about how Taiwanese cuisine is a part of Chinese cuisine. I was confused and infuriated to a point that I just want to talk back.
And then therefore on the framework of writing about Taiwanese cuisine under Japanese rule, I want to make a point. This is my response to those people that I believe Taiwanese cuisine is not part of Chinese cuisine, nor is it a part of Japanese cuisine.
