It regulates the body and whether or not the extra glucose from food gets stored as fat. Insulin levels spike whenever we eat carbohydrates (Potatoes, rice, or pasta etc), proteins (fish, chicken or turkey etc) or fats (olive oil, avocados or nuts etc), but spike a lot more when we eat highly processed foods like sugary foods in snacks and mainly foods void of fiber. Foods high in fats don’t spike insulin as much while protein in animal foods spike insulin levels moderately. The body does not burn fat efficiently when insulin levels are high, instead the body uses stored glucose or food energy for fuel. In the fasted state insulin levels are low allowing the body to gain access to stored body fat. The body burns more fat once glycogen stores in the body is depleted.
