After winning a prestigious butchery competition in Singapore Eric Kwek (Mr Tompkins) was awarded a trip to Australia to stage at some of the country’s best butchers and restaurants. It lead to an offer of work, and over a decade of plying his trade in some of Melbourne’s best restaurants.
