Donald K. Layman is a professor emeritus of nutrition at the University of Illinois. He is a seminal researcher in whey and protein who has made significant contributions to the field. For many years, he has worked to define protein and amino acid requirements and the interrelationship between dietary protein and carbohydrates in adult health. His focus has been on how diet and exercise can impact obesity, type 2 diabetes and the metabolic syndrome.
