Amanda was diagnosed with Hashimoto's about 1.5 years ago after being misdiagnosed by other doctors. She was experiencing symptoms that the doctors couldn't piece together, and no one had ever run a full thyroid panel and hormone test until her current doctor. Amanda was advised to eliminate dairy and gluten from her diet. Unsure of what to eat anymore, she started eating a lot of meat. She would sometimes add rice, which her stomach seemed to handle well. Every meal is now focused around protein and meat. Within months, her inflammation went down, and about six months later, her bloodwork showed significant improvement.
