很多人认为,低温有助于保鲜,所以在囤菜时,都喜欢把蔬菜都放进冰箱保鲜。实际上,并不是所有食物和蔬菜都适合放进冰箱里,比如洋葱、黄瓜、茄子、甜椒以及土豆、萝卜、红薯根茎类食物更适合在阴凉干燥处保存。叶菜类、菌菇类以及鲜豆类等蔬菜可以放冰箱保存,但绿叶菜最好在3天内吃完。此外,放进冰箱的蔬菜应分装放置,尽量不要堆在一起储存,很多蔬菜会释放乙烯,对其他蔬菜有催熟作用,反而会降低保存期限。
