有些人抱怨吃素吃不飽、體力維持不了多久,茹素10年的中醫師郭哲彰認為是因為吃得不夠均衡。 他說自己高中時期沈迷武俠小說想練武功,偷偷嘗試吃素、斷食只喝水,結果體力愈來愈差,整天提不起勁想睡覺,誤以為自己不適合吃素。後來學了中醫才理解是吃錯了。吃素均衡吃,不但不會餓、身體負擔少,且能維持頭腦清晰、精神暢旺。 郭哲彰分析,吃素吃得太清淡,缺乏蛋白質及油脂,蛋白質是細胞主要成分,提供生長發育所需,蛋白質不足容易疲憊想睡、引發肌少症,也會影響孩童的生長發育及專注力。油脂攝取不足則有礙腦部發展,並讓情緒失調,變得焦慮、緊張、容易失眠。另外,「胃酸多、胃發炎及便秘也很常見,」郭哲彰發現,素食者油脂攝取不足,腸胃滋潤度不夠,容易引起腸胃發炎及便秘。 因此,郭哲彰的素食餐桌很強調多補充優質蛋白質及好油。他常補充雞蛋及各種豆類,富含優質蛋白質,能提供身體足夠燃料,維持長時間的好體力。油脂則供給大腦運轉所需能量,至於腸胃問題,中醫認為胃系統喜潤惡燥,多吃好油例如苦茶油、紫蘇油、橄欖油等不含部分氫化物的植物油,能滋潤腸胃、協助排便順暢,並維持心緒平穩安定。通常郭哲彰會把好油澆淋在食物上,而非油炸,有時出門在外他會攜帶200cc的小油瓶內裝苦茶油,因為苦茶油穩定性高、不易氧化,方便隨時為自己補充能量。
