★做菜時太甜或太鹹或太酸,而五分鐘後就要上菜了,這時不妨加一大匙油下去,這道菜就有救了,因為油脂會包覆我們的味蕾,猶如在我們的味蕾上蓋一層毯子,讓味覺變得遲鈍。不過這只是救急時騙過味覺的方法,不是根本之道喔。 ★我們不斷被教育吃太鹹易得高血壓或各式各樣的疾病,所以做菜時傾向少加點鹽,但是吃得不夠鹹我們就更想多吃點其他的東西,到頭來愈吃愈多,還不如一開始調味就下足夠的鹽。
