灌肠是北京地区特色传统名吃之一。是北京人喜爱的一种大众街头小吃。灌肠在明朝开始流传。《故都食物百咏》中提到煎灌肠说：“猪肠红粉一时煎，辣蒜咸盐说美鲜。已腐油腥同腊味，屠门大嚼亦堪怜。”老北京街头常有挑担小贩经营此食品。有记载：“粉灌猪肠要炸焦，铲铛筷碟一肩挑，特殊风味儿童买，穿过斜阳巷几条。另外，在山西太谷、榆次、徐沟等地区盛行的灌肠是一种以荞面为原料的特色面食小吃，它与北京人吃的灌肠完全不同，历史悠久，代代传承，有炸、煎、炒多种做法，食用时加上辣椒、蒜末、姜末，口感美味，深受当地喜爱。在太原地区，有杨记、贾记多家特色灌肠商铺。
