灌肠是北京地区特色传统名吃之一。是北京人喜爱的一种大众街头小吃。灌肠在明朝开始流传。《故都食物百咏》中提到煎灌肠说:“猪肠红粉一时煎,辣蒜咸盐说美鲜。已腐油腥同腊味,屠门大嚼亦堪怜。”老北京街头常有挑担小贩经营此食品。有记载:“粉灌猪肠要炸焦,铲铛筷碟一肩挑,特殊风味儿童买,穿过斜阳巷几条。另外,在山西太谷、榆次、徐沟等地区盛行的灌肠是一种以荞面为原料的特色面食小吃,它与北京人吃的灌肠完全不同,历史悠久,代代传承,有炸、煎、炒多种做法,食用时加上辣椒、蒜末、姜末,口感美味,深受当地喜爱。在太原地区,有杨记、贾记多家特色灌肠商铺。
