老北京的茶铺老北京人为何这样痴迷茉莉花茶,主要原因有三个:一是北京不产茶,茶叶要从南方运来,那时交通不发达。一路奔波总得需要几个月。不禁放的茶叶经过这么长时间后,耗费严重。而花茶因为经过多次的窨制,受此影响较小;二是北京水质硬、涩、咸、苦,用来冲泡红茶、绿茶、鸟龙茶等不仅香低味淡,而且品质欠佳。而沖泡茉莉花茶,则可以掩盖其缺陷;三是慈禧太后独爱茉莉花茶。正是在慈禧当政时期,福州茉莉花茶成为贡品。慈禧太后最爱喝的是茉莉双窨,即将事先窨制的茉莉花茶在饮之前再用鲜荣莉花窨制一次。
