I take the leg and the thigh off and I debone them and then I stuff them and roll them and tie them.
So now I have two big breasts that I put a little mushroom duxelles, mushrooms and onions and garlic and Dijon mustard under the skin and underneath the tender, I roll and tie that.
Then I take the leg and thigh, I debone that and I stuff it with that mushroom duxelles too.
You put those in the oven, 450 degrees for 45 minutes.
They come out golden brown.
And you just take an electric knife and you slice these roulades.
And you slice this nice turkey breast.
And it's so moist and so juicy.
A turkey cooks.
How long does it take a turkey to cook?
Three hours?
Four hours?
Who knows anymore?
You never know when the thing's done.
You're waiting for that little popper to time, that little timer thing.
That thing ain't popping up.
I'm telling you, it's the best way to cook your turkey, and it will change your life forever.
