The overall answer is because evolution isn't perfect, it's good enough.

Okay, so the sun is putting most of its energy out in the green.
But the plants aren't absorbing green.
The reason that they're green is because they're reflecting green.
We have plants that have somehow evolved to reflect and not use the maximum amount of energy from the sun.
And it goes way back to the purple lakes of Australia.
And as you drive around Australia, you'll see every now and then there's a purple lake, and they were the first creatures that did photosynthesis about three and a half billion years ago.
And they were clever enough to think, oh, the sun is putting out most of its energy in the green, therefore I will absorb the green.
And if they absorb the green, well, they reflect the other colours, which are red and blue, and so they look purple.
and they're floating at the top of the water column.
And then later, other critters thought, hey, I want a bit of this free energy, but down here, the only light that's coming to me is just that red and purple stuff.
