Like how did you come up with this idea?
How far did you go to push those boundaries?
Today we're using ingredients that a few years back we never thought that that ingredient could end up in a cocktail.
Such as anchovies or sea urchin, for example.
And it's all about really understanding how you can combine this flavor in order to make it delicious.
Like Monica said, that you want to make sure that whatever comes out, guests pay for it and then want those guests to come back and returning and have another experience.
I don't know if you two both agree that I always look at the face expression.
