Obviously, like I've given my opinion on Rime of the Frostmaiden and you've already decided you want to run it. So that's totally up to you. I would take a look at, think of Curse Scroll 3, which does some kind of Nordic Viking-y sort of things for Shadow Dark.

There's probably a lot of material you could harvest from Curse Scroll 3 to add to your Shadow Dark game that I think might make it work well with Rime of the Frostmaiden. It's up to you on how you want to handle your freezing and starving to death mechanics. I don't know that I put too much into that.

But yeah, I think actually Shadow Dark would work very well in the environment of Rime of the Frostmaiden. I think that could work very well. I think the story for Rime of the Frostmaiden is kind of a great big mess. So I would use it more like a setting book.

And maybe a general plot and theory book than I would to actually try to follow any kind of storyline in there. Like pick which one of those villages they're going to be at. I like Bryn Shander. And obviously you're going to have to reskin all of the monsters and all the encounters and stuff like that. But I don't think that that's particularly difficult for Shadow Dark.
