Hi friends, I'm Karen and this is the Family Food for Mums podcast. We're talking about inspiration for family cooking and dining. Lately I've been trying to have more breakfasts or light meal items for on the go. Whether I'm at home or gonna be out, it's great to have something to grab in the morning because often I just things get crazy busy so fast. Or there's no time to really Make breakfast. And I wanted to be sure that I was getting enough good fiber, good protein in the mornings. So I've been planning and preparing quite a few things that work for morning meals, morning snacks. And also I was talking to a friend lately and she was saying how she often just grabs half a bagel out on her way to church or just can't think of what to eat in the morning when she's in a hurry.

So that got me thinking as well, and I wanna share some ideas for High fiber and usually high protein things, some of them aren't high protein, but good things to either grab at home while you're busy or to take with you to eat in the car or to eat once you get someplace. Also, sometimes we're not that hungry early on. I know they recommend eating within an hour of waking, but that's not always best. Sometimes it's helpful to just be able to go and And then eat once you're relaxed and in a place like a a doctor's office where you have to sit and wait or something like that. So let's talk about some ideas. Hopefully this will inspire you with ideas for what you like and then you can do a bit of preparation to keep things ready in the fridge or freezer that you can then grab when you need to.

So one of the best things that I'm sure a lot of you have had before, but which I only started to make very recently is tea pudding. And it's so easy to make and it's really delicious. And I have these lovely little jars that I was going to use for home yogurt making, and I haven't got around to that. So I've been using them for the chair puddings. They're about 150 milliliter jars. Uh, and I usually fill them two-thirds full, so probably a hundred mil in the morning, and that's really convenient. Convenient to grab whether at home or going out somewhere. Just grab a jar from the fridge with a teaspoon, and you're good. So I make the chia pudding every few days. Uh, the one I make at the moment has I use raw milk, about two cups, then about four tablespoons of chia seeds, maybe five if you like it thicker.

Uh four scoops of chocolate bone broth protein powder. I use the ancient nutrition one. I add a few shakes of sea line cinnamon, pinch or two of salt, and then some sweetener. I've been using the monk fruit erythritol sweetener. You could also use maple syrup, it'll make it a little runnier. about three tablespoons of sweetener. And then you kind of whisk it up and then leave it for ten minutes and often the chia seeds clump together because of the runny milk liquid. So you need to whisk it again. a few times over an hour, then I leave it out for an hour until it thickens up and is nicely mixed up. And then I put that into the jars and leave them in the fridge overnight or longer. You can do a yogurt chia pudding where you mix the seeds into the yogurt, add a little bit of sweetener as well.

They they clump less, I hear. Or you could do something with a raspberry flavour. There's many different recipes on the internet. So cheer pudding is a is a great one 'cause it's so high in fiber and it's got good protein, especially with the protein powder added. Then uh I haven't done this for a while, but pre-made egg muffins, if you like egg. So basically doing them in muffin cups, cooking some zucchini and bacon, or even some butternut, and then putting little bits of that into the muffin cups. And then your egg mix you make by blending maybe 15 to 18 eggs for a couple of muffin trays. You can add a little bit of a. Yeah. And then either feta or cottage cheese makes it really delicious. You can add some grated cheese as well, and then lots of herbs, about a teaspoon and a half of salt.

Oregano is nice, you can add a bit of smoked paprika, onion powder, just be creative.
