And they, for the past couple of years, they have requested that I cook the meat. So this year I made a pork tenderloin that was marinating in the fridge overnight and had a nice glaze and was cooked with some onions and apples and turned out quite tasty. And found one thing that I can say is good about Cutco knives.

Chapter 2: What guns do the hosts wish they hadn't passed up?
But Shadowversity, who does, like, sword and medieval weaponry reviews and things like that, he actually, to prove a point, and this is a brilliant point, he took one of those metal contracting rulers and sharpened it. And like he cut a watermelon in half with it. He was cutting a bunch. I think he was cutting paper and things like that.
Like it was razor sharp for a little bit and then it was gone. And it's not anything can be really, really good sharp. The question is, can you do any sort of work and have it still be sharp?
Right, and as you get in the higher and higher-end steels, as Weird was talking about, edge retention is a big thing that you'll notice that the $400 kitchen knives that professional chefs use, those things hold an edge for a good while. Of course, there's also the...
how well it holds up, how corrosive resistant it is, which can be a thing that increases or decreases as you go up in the price of the steel. Those El Cheapo surgical steel knives that are pieces of junk will actually hold up really well to rust and other corrosive things because they're pretty much pure chromium.
Yeah, I have a few dive knives that have absolutely terrible edges, and they just won't sharpen well at all. But... But they've been to the bottom of the ocean with me a whole bunch of times, and they still look brand new.
I used to use the steel that Ramsey uses when you see him sharpen a knife.
Well, that's a honing steel. You don't sharpen with those, but you hone.
Yeah. So that's slightly different. You actually use that to hone, which is basically, as you're using the knife blade, The knife blade is actually thin enough at the tip that it'll roll over. And that honing steel, use that to straighten the edge back straight so that the actual edge is touching what you're cutting.
Yeah. Now, I... I mean, so I always like to do that one because I always looked cool.

Chapter 3: What are the memorable gifts received during the holidays?
I felt like I'm like, oh, I look so cool.
Yeah.
And it's and it's great to go like a couple passes on that, like every time or every other time you pull out your kitchen knife, especially if like, OK, it's it's time to, you know, carve up a chicken or something like that just to just to touch it up. Those little hand things I've always had. It's the first one I've gotten that actually worked well. Okay.
Yeah, because a lot of those are just junk.
I mean, the issue with them is that they are set to one set of angles. And so, therefore, it's either going to work really, really well for you or not so well. And but the one good thing about it is that if you're new to sharpening and really it's just a good idea to like, honestly speak, buy one of those like cheap blister pack chef knives and use it in your kitchen.
And every time every time it gets even partially dull, bring it back to that razor sharp and you'll you'll figure it out pretty quick. And if you do something wrong, you're not going to ruin anything. That's that's not that's not that's not willing to be thrown in the trash. But getting that consistent angle that you have, that's the big issue.
Because if you start sharpening and your angle drifts, you're going to start undoing your work just as fast as you're doing it.
Yeah, I've bought a few of the sharpeners in this one. This little pocket one sort of is the first one that actually legit has worked well. Like Sarah has the. That's great. I don't remember the brand she got. It was it was some I can't remember. It has like a sticker on the side of it. And it says like what, you know, it has the bird's beak knife, has a bunch of different knives.
But it's legitimately the first one. I'm like, actually, this one works really well. So, yeah, I mean, I wish I could remember the brand.

And I threw a link in the chat of actually it. I believe that is the kit that I was using this weekend to to sharpen the kitchen knives.
Have you have you seen the ones that come with like the little the little wood block and then like the rolling stone you can roll over it?
I have seen those. Are you talking about the, like, it's a cylinder and you roll the cylinder down the edge?
It kind of looks like a hockey puck. You put the knife against the wood and it gives you the angle.
Yeah. Um... Yeah, I've seen those and I haven't used them. I also have the just free... I usually use just the freehand blocks like what I posted in channel, which especially if it comes with some angle guides to help you out at the beginning, but...
you fairly quickly learn how to because you're not using you don't want to use much pressure at all um you you learn how to uh feel where where the edge is as you use it it um freehand sharpening is not that difficult just takes a little bit of practice like like weird said yeah try try some on on some um some some chunking knives first to get your get get uh some practice in um
I also have like the the workshop sharp ones that you clamp the knife into the device and run the stone across it. And the stone is is set in it so that it's at that set angle. Yeah. That's the way you want to do it.
I just posted. You can put in chat if you want, but this is one of those. I inherited this. I've mentioned something. I've had a friend who actually made knives. I was actually thinking about it when I was getting everything ready for the Christmas meal. I pulled out his – I pulled out – he made me a tool steel carving knife. and it's got a really thick spine.

Chapter 5: How does the drink segment tie into the conversation?
thanksgiving part two the christmasing um we we hosted that at uh at our house and so i spent like essentially three straight days cooking just could do cooking as much as i could in as advanced as i could so that i wasn't doing everything the day of um and it all worked out uh Worked out really, really well. There was eight of us over, and the meat was a ham. I also made asparagus.
I roasted a turban squash, which if you haven't seen a turban squash, if you're a Metroid fan, you'll like them. um and have you seen one yes yeah but uh they look like a metroid that's what my buddy said we got a turban squash from our farm share looks like a metroid um but yeah so yeah and uh i made some yeah i made a potato casserole that sort of stuff made rolls good good times and
And I will say, actually, so I've got a bunch of leftover rolls and a bunch of leftover ham. And I think it was Oddball you were suggesting talking about Hawaiian rolls with ham and Swiss cheese and just baking it in the oven. And I went, you know what? What? The boy's got a point there.
And yeah, and so I took some of my leftover potato rolls, and I've been doing this new thing, and I'm kind of getting hooked on it, which is I'm making my own mustard. I buy mustard seeds, and I have a spice grinder. You can buy powdered mustard, but if you can grind your own spices, trust me, if you do any sort of cooking, buy yourself a spice grinder. It'll pay for itself in a year.
Um, but the, uh, but I'll, I grind up some mustard real fine. Sprinkle, you know, it's like I ended up making like two small sandwiches for breakfast this morning just cause I had one for dinner and I'm like, I need a little bit more now.
And, uh, but so I made like about a T a tablespoon of, uh, of mustard powder and then just start adding water to it until it's a, until it's just starting to essentially come together in a paste. And then you leave it alone and the water actually reacts with – I should look up the chemical reaction that causes it.
But essentially, the water will react with the oils and the mustard powder and start releasing essentially the compound that is that pungent mustard wasabi type burning, burn your nostrils type flavor. And the longer you let it go, the hotter it will get.
Until eventually, I assume that's like the peak is pretty much the like, you know, go to like a good Chinese food restaurant where they fresh made the mustard. And it's that really, really, really pungent mustard. That's like 15 minutes of soak time. And then you can halt it by adding acid. So I usually add just a little splash of vinegar and like a pinch of salt and mix it up.
And yeah, then I spread that over those rolls with the leftover ham and a little slice of Swiss cheese and then melted it in the oven.

Okay. Well, it originates from the province of Quebec, as you figured. Okay. Usually, it's ground meat. Usually, for me, it's pork and beef with potatoes that kind of help bind the mixture. The signature flavor comes from the spices like cinnamon, cloves, allspice, nutmeg, thyme, and sage in a crust, golden flaky crust, like we've heard from the Dice Arts commercial.

and uh oh it's so good i had i had it christmas eve and then for lunch on friday i brought two pieces that were left over it's so good it's very solid it's not liquidy like the turkey pie is liquidy because it's kind of get the gravy in it but uh but the touchy pie is always always very solid but mash it up a little salt and pepper on it oh it's perfect

Finest kind, dude. And the kids had a good time. The boys got a bunch of stuff they wanted. Connor got a belt-fed, tripod-mounted minigun. Nice. And we're going to get more belts, because you can link as many belts together as you want. And I realized that I have an old .30 caliber ammo can that we can lay the belts in. Oh. Oh, yeah, Sarah already has two extra belts in her Amazon cart.
But he was so excited. I was actually more excited because Sarah asked me which one to order, and I had her order it. He got his World War II reproduction helmet because he is fascinated with World War II-y. Loves looking at stuff about it. He likes playing Call of Duty World War II. And he got the helmet with the webbing and everything. And it's an actual metal helmet.
Like, the supports, the suspender supports inside of it are in there. And I told him, I'm like, dude, we can get stencils and we can, like...
paint stuff on the side of it and i told him we'll go down and get a pack of candy cigarettes you can put it in the side of the strap and uh so he likes that but i mean my dad put it on he goes holy crap that's heavy i know i know he's more of a world war ii than a vietnam but with that helmet he needs a uh a peace sign uh peace sign pin in the band and born to kill written across the helmet

So what were your choices?
uh, for, for drink segment. Yeah. Uh, yeah. So, uh, so actually the one that I, the one that I have is that, uh, uh, I ended up, uh, opening up a, uh, a bottle of vermouth. I finished off one of them actually making, uh, uh, making risotto. Um, I make my, I make my risotto with vermouth instead of white wine, mostly cause we don't have any white wine. Um,
but, uh, it works out well, but it's, I don't know if it's pronounced. I always heard it as an Ollie Pratt, but it might be noily Pratt. Cause there's an eye in there. I don't know. It's French. Uh, but, uh, I ended up buying a bottle of this, uh, and, uh, gave it a try. And you know what? This may actually be my new favorite vermouth. Uh,
Um, I've talked, I've talked to people in the, in the past that I, I really like, uh, using a Fino Sherry in my martini instead of vermouth. Uh, I just, I find that it just goes, it, it just, it just rounds it off a whole lot better. Like the, well, the Fino, despite being considered the driest of the Sherry's, it's pretty sweet or not.
It's not sweet itself, but it's sweeter than most dry vermouth. And, uh, And so I find that kind of rounds out the martini a little bit more. And this one too has that. It's actually, I kind of like it better because it has that, I guess I couldn't even say sweetness, but fruitiness. You can actually really taste the wine in this one.
And that blended with the herbs and infusions and all that stuff in it. It's good. It is really, really good. So I just wanted to let everybody know that if there's a dry vermouth cocktail or just someone who just likes to drink a vermouth before dinner, go give Nolly slash Noily – I don't know how they pronounce it. I should have looked that up – Pratt out.
and also I will note that, um, in part of my argument that the original martini was made with sweet vermouth. And that's the reason why I, a martini with dry vermouth is specifically stated as a dry martini. Um, One thing to note also is that Martini and Rossi is, of course, an Italian company.
And if you read old cocktail books like Turn of the Century, they will sometimes refer to a cocktail either taking French or Italian vermouth. And Italian vermouth essentially means sweet vermouth. So that is the red sweet variety. And the white dry variety is, is considered French vermouth. So the fact that this stuff is made in France too, that's another little feather in its cap.
