Sonia, I'm up to my ears in corn. I feel like you're about to burst through the screen. You're already coming in strong with a corn joke.
I love it. I grew up among the cornfields. I am a Midwestern girl. I would see the cornfields every day when we drove to school or into town. My dad is a corn farmer. He's not a sweet corn farmer. He's a seed corn farmer. But I grew up eating so much corn. I love corn and this is the best time of year for corn because the sweet corn is coming in fresh and you can eat it straight from the cup. You can eat it in salads and pastas and soup and fritter. There's so many things to do with corn that I feel like I could talk to you for the next 10 hours about corn.
There's no way we're gonna get through everything you can do with corn. It is this ancient staple ingredient. And every time you put out corn, just even simple, basic buttered corn, people are happy.
It's so true. So, Sonia, the thing think about in the summer when all the corn is fresh, whether you're going to the farmer's market or in the town that I grew up in, there were roadside stands. We knew what road they were on. And you would drive by and pick up a bag of corn, or even at the grocery store. When I'm thinking about planning what I'm gonna cook with my corn, I think about the saying, which is what grows together goes together, and what's Growing at the same time as corn are beans and squash. And we've talked about this before. There are the three sisters. We had Javiera Lara on here for a whole episode to talk about the three sisters. But those are great mixes for corn. Because corn is also so sweet, peppers are an amazing combo for corn, as you know, anything spicy.
And also all the herbs that are fresh right now, too, which we also cook. a lot with and we love like basil is amazing with corn mint. cilantro is a hu a very natural pairing. I would even say that dill works with corn. Oh in the right context. I've never thought about that, but I would love to know what you're doing with corn and dill.
We'll circle back to that idea. I have a place for it. But yeah, these are all important ways to think about corn. In the summer I'm often looking at the garden to see what's growing at the same time. Because like you just said, I know it's gonna go together. You can put it in a skillet, it's gonna work out. And I do think corn is one of those ingredients that of all the vegetables benefits the most from every dish being a combination of salt, fat, acid, heat, and of course umami. It's just that sweetness wants balance.
Yeah, it needs a good punch of salt. So I think we should just jump right into it. And I would love to start with the most classic, corn on the cub. And I feel like you have a great idea of what you do with corn on the cub.
Well, it comes from a dinner p a dinner party I recently chefed. And I've done corn at parties at home and professionally many times. So I love grilling whole corn on the cob. And there's a lot of different philosophies around that in and of itself.
