北海道の初夏を代表する野菜「アスパラガス」。生産量は北海道が日本一。積丹半島の岩内町には「日本のアスパラガス発祥の地」という記念碑もあり、歴史的にも北海道は、日本のアスパラ栽培で大きな役割を果たしてきました。前回に引き続き今回も、30年にわたってアスパラガスを研究してきた 酪農学園大学 教授 園田高弘さんに「アスパラガス」について伺います。
