今回のテーマは、 『北海道のサツマイモ』。みなさんは、ここ数年で北海道のサツマイモの生産量がグングン伸びていることをご存じでしょうか？ 今のところ、生産量は、鹿児島、茨城、千葉と道外が上位を占めていますが、いずれ北海道がサツマイモの一大産地になるのではと、期待が高まっています。そうした期待を背景に、去年、生産者から研究機関まで、様々な立場の人が集まって「さつまいも北海道プロジェクト」が発足。「北海道産さつまいもを世界の人気者にする」をスローガンに活動しています。それに先駆けて、道内では、由仁町と栗山町で生産されてる「由栗（ゆっくり）いも」など、サツマイモの地域ブランドも登場。人気を集めています。今回は、食品加工が専門で、「さつまいも北海道プロジェクト」に参画している酪農学園大学 教授 阿部茂（つとむ）さんに「北海道のサツマイモ」について伺います。
