今回のテーマは『ジビエ』。「ジビエ」とは、フランス語で、狩りの対象となる野生の鳥や獣（けもの）、またはその肉のこと。日本でも野生動物による農業や林業への被害が広がる中、 しっかりとしたルールや衛生管理のもとで、捕獲した動物を「ジビエ」として有効活用しようという取り組みが広がっています。特に北海道は、ジビエの利用量が日本一！道内のレストランや飲食店でも、北海道ならではの食材として提供するお店が増えています。 今回は、 狩猟免許を持ち、野生鳥獣の研究をしている酪農学園大学 准教授 伊吾田宏正（いごた・ひろまさ）さんに北海道の「ジビエ」 について伺います。
