今回のテーマは、 『ハナサキガニ』。漢字では、「花が咲く蟹」と書きます。ロシアのサハリンやカムチャツカ半島などにも分布していますが、 日本国内では根室を中心に、北海道の限られた海域にだけ生息。味は濃厚で、食用として漁獲されていますが、もともと流通量が少ない上に、近年は水揚げ量も減少。持続可能な漁業への取り組みが行われています。地域が限定され、流通量も少ない希少性、そのおいしさからブランド価値も高く、根強い人気を誇るハナサキガニ。今回は、根室市水産研究所の所長 工藤良二さんに「ハナサキガニ」について伺います。
