北海道は、ウニの漁獲量日本一。この時期、ウニ漁が盛んに行われ、北海道の夏を代表する海産物になっています。しかし、近年、ウニの漁獲量は減少傾向にあるとも言われ、道内でもウニの研究や様々な取り組みが行われています。今回は、北海道大学大学院 水産科学研究院 准教授 浦和寛さんに「北海道のウニ」について伺います。
