今回のテーマは 『北海道のチーズ』。北海道は、生乳の生産日本一！全国シェアの50％を超える酪農王国です。そうした環境から、チーズの生産も盛んに行われています。国内外のチーズコンテストで、北海道産チーズが金賞やグランプリを受賞することも珍しいことではなくなり、先月、東京の裏参道ヒルズでは、北海道産チーズ およそ300種類を揃えた大きなイベントが一週間にわたって開催されるなど、「北海道のチーズ」は、一大ブランドになっています。今回は乳製品の研究をしている酪農学園大学 准教授 栃原孝志（とちはら・たかし）さんに「北海道のチーズ」について伺います。
