北海道は牛肉の生産量日本一。全道各地で肉牛が飼育され「白老牛」「びらとり和牛」「ふらの和牛」など、その土地ならではのブランド牛が人気となっています。肉質の面でも最高ランクの「Ａ５」に格付けされる和牛も増加傾向にあり、和牛の生産地として注目される北海道。さらに、道内で生まれた子牛は全国に出荷され、日本のブランド牛を支えています。 今週と来週は、酪農学園大学学長の堂地修さんに「北海道のブランド牛」について伺います。
