北海道は、大豆の生産日本一！北海道の大豆は、豆そのものとして食べられるほか、お味噌や醤油など様々なものに加工され、日本の食文化を支えています。 しかし、大豆による油の生産も含めた国内自給率は、わずか６％。油の生産を除いた食用品の自給率でも２０％台と、大きく輸入に頼っています。国産大豆の需要が高まる中、さらに重要性を増す北海道の大豆。今回は、大豆の栽培を研究する、酪農学園大学 准教授 飛谷淳一さんに「北海道の大豆」について伺います。
