今回のテーマは、『北海道の牡蠣』。その高い栄養価から「海のミルク」とも言われる牡蠣。北海道の牡蠣の生産量は、2022年、殻付きの状態で、4200トンと全国6位。シェアは2.5％と決して多くはありませんが、ある調査で、「牡蠣がおいしい都道府県ランキング」の２位に入るなど、高いブランド力を誇っています。今回は、ススキノにあるオイスターバー「バールバール プロペッチョ」のオーナーで、オイスターマスターの菊池崇久（たかひさ）さんに「北海道の牡蠣」について伺います。
