今回のテーマは、 『北海道の豚肉』。あなたのおうちの「すき焼き」や「しゃぶしゃぶ」「肉じゃが」は、牛肉でしょうか、それとも豚肉でしょうか？豚肉文化が根付く北海道では、豚肉が使われることも多く、そのほか、帯広の「豚丼」や「室蘭やきとり」など、豚肉を使った名物が道内各地にあります。北海道の豚肉の生産量は、全国トップクラス。道内には、およそ20のブランド豚があります。今回は、養豚や養鶏に関する研究をしている酪農学園大学 教授 山田未知さんに「北海道の豚肉」について伺います。
