ブランドとして定着している北海道産小豆の2020年生産量は48,600t、国内シェア93.6％ を占め、北海道が断然トップを走り続けています。天候と土壌が適した十勝地方を中心に、 地域を挙げて産地のブランド化を目指しているオホーツク地方など、ほぼ全道で小豆が生 産されていますが、中でも生産量が多いのは、十勝、上川、後志、網走などです。今回は、「あずき博士」と呼ばれる名寄市立大学 教授の加藤淳さんに「小豆」について伺います。
