How how do you describe what you do at your restaurant?

The only part of the city that I've been to where there is a Mexican community and you can get

Nopales, you can get some of these things, you can get, you know, non-like stereotype of just one region of food.

Um, like soul food, you know, you have the greatest hits.

You have fried chicken and collard greens, but there's regional differences that a lot of people don't know about.

In New York, you can only get that like East Harlem, and then there's one little strip midtown west on like 8th or 9th Avenue where they

There were these little grocery stores that would have like a taquerilla in the back.

And there were only like four or five of them left because some of them got priced out.

But um but Chef Repair would would take the sous chefs there sometimes.

Um but Me you know, Mexican cuisine is not hugely represented with that diversity in New York like it is in Chicago.

But for the food that you do, how do you kind of balance honoring the tradition?

Do you think that Mexican food in America is still misunderstood overall?

What I find interesting is all these videos, like some some great cooking videos and some really good inspiration.
