I cut my teeth on gluten-free diets way back in the day.
And let me tell you a short story.
I went and did a talk.
I was invited to give a talk on these diets.
At the end of the talk, this woman comes up to me.
She says, you know, I've been doing a gluten-free diet for my IBS, but I really find your talk interesting.
I'm convinced that actually, if I'm honest with myself, it's not really helping that much.
It just makes me feel sort of empowered.
And I was like, oh, wow, great.
I'm glad that, you know, I'm glad to talk.
She's like, well, so now what do I do for my IBS?
And I just kind of sat there.
I was like, geez.
I walked into this woman's church.
I destroyed her rituals that were actually helping her feel empowered.
You know, what's it going to take to change someone's mind about seed oils or gluten?
Well, the truth is I'm not sure I should be in the business of changing someone's mind.
