I raised up in hotel family.

I remember being in Cancun when it was really small, beginning in the late of 80s when I was five years old.

And there was a hurricane and we spent the hurricane in 89 in Cancun.

And my dad was F&B manager in a big hotel from Elia.

And so I was born in Acapulco.

Come on, Acapulco is the Mecca or was the Mecca

of tourism, no Elvis Presley, Johnny Weissmuller, even Sylvester Stallone, Schwarzenegger, et cetera.

All they had the villas over there.

No, John F. Kennedy was there during his, after the honeymoon.

So, and then hotel management school, et cetera.

But, um,

I was one, if I have to choose one special moment, I think it was one, my first big hotel traineeship.

It was the Ritz-Carlton in Cancun.

It was in 2000.

I was just, I just became 16.

I was there four months as a kitchen training in all kitchens, fine dining, et cetera.

And this hotel was the best in all Americas, not only the Latin America.

It had three five-star, triple diamond awards.

So this was unique.

My uncle was the restaurant manager.
