What does the vodka do for this?
I think it gives it, smooths it out.
Takes away a bit of the acidity from the tomatoes and gives it that heat without putting chili in.
There's so many tomato sauces, all chili, chili, chili.
Because I think the vodka gives it that little bit of heat.

So we've got a lovely Italian wine, a Colli Massari Rosso, and it has notes of ripe fruits and spices with a dense yet soft structure, fine tannin, and yet fresh acidity on the finish.
