It's stressful, but it has an open kitchen.

And the thing with open kitchens in London, especially central London, because of the cost of rent, all kitchens are in the basement.

You don't see the people there where the bathrooms are usually in the basement.

And it doesn't make sense because that's the money space, you know, massive open kitchen.

But for me, the honor comes from that.

I have two grandmothers.

I've got three mothers.

I've got a kitchen of 12 women who are cooking and singing in rhythm.

And so we're now moved to a bigger open kitchen.

I've always, you know, I love Kingly Court where I was right now, but I've had to move because, you know, it was just getting too small for us.

And I found this amazing site and it's just off Piccadilly Circus.

And these things matter because this is my flag in the ground.

For all those women and all those men who cook hidden behind walls, I have opened it up.

Watch us.

We are cooking not as a show.

We're not trying to impress you, but we want to remind you that someone is laboring for food.

And even just, you know, I do a lot of work with farmers and I've always felt that, you know, the way chefs look at ingredients is their God-given right.

And anyone who comes to my restaurant will never get okra.
