I had some Russian clients last year, and they wanted to make their traditional Russian fish head soup.

And the head lady, apparently she was like the Bill Dance of Russia.
She was like pro-fisherman.

Anyway, they make the soup by, like, boiling fish heads, whole salmon carcasses in there, just pick all the meat off.
But she would eat the boiled heads after they've cooled off, and they're just all freaking coagulated.
If you can imagine the head of a buck's silver salmon, just with a big kite, and it's all bulbous.
Yeah, she'd just start at the nose and work her way back, and just cartilage, teeth, everything.

I got suckered into it.
She's like, everyone in Russia does it.
And I was like, oh, well, you know, just being polite.
Took a big old chomp and everyone started laughing.
