That last part I learned while baking my way through that cookbook and trying to get to my perfect loaf of bread.

I never quite got there.

I never got to capital B good.

But I got pretty good at baking bread.

Well, I thought I got pretty good at baking bread.

Because when I was 22, I was living with my parents after graduating college during what we called the novel coronavirus.

I applied to work at a bakery.

And in my application, I presented myself as a fairly accomplished home baker with 10 years of experience.

And I had read so many books at that point.

But my first day came along, and I realized that knowing all the names for things is not the same thing as knowing what they are or how they work.

And my first day, I was inundated with

new words, with new phrases, with new motions that I needed to learn.

Instead of baking two loaves a week, I was baking 2,000 every single day.

And in the light of that, I did not feel like an accomplished home baker.

I felt like I was 12 years old, looking at my mother's hands again.

But I went home that night and I came back the next day

And the next day, and the next day, and I did it over and over and over again until I knew and I learned.

I'm 24 years old now.

I know a lot more than I used to.

I know how to shape the dough into a batard.
