You're better off eating it cold because when you heat it back up, you are at least on some level breaking down the starch molecules. So now there is an argument to say that if you reheat it and then let it cool again, you get even more resistant starch. So what we think is it keeps leveling up.

Yes, and the cool thing about this is that many people who struggle with fiber, so for the person who does have gut issues, as we sort of led into the episode talking about like what happened with sorghum, For the person who does have gut issues, the beauty of this is that you can get your resistant starch in a package that's easy for your body to process and digest.

You feel well, it's not challenging you and making you feel bad. And yet at the same time, you're healing your gut by consuming this type of food. That's awesome. Yeah. So we talked histamine. Yeah.

Yeah. Okay, cool. So, all right, FODMAPs. This is super nerdy. So it's an acronym, FODMAP, F-O-D-M-A-P, which stands for fermentable oligosaccharides, disaccharides, monosaccharides, and polyols. Now, saccharide is another word for sugar.

And what we're talking about here when we talk about oligosaccharides is where you take a bunch of sugar molecules and you actually link them together and you're creating a chain. And as that chain starts to build out, you're creating complex carbohydrates. So it's no longer a simple carbohydrate like a single sugar or like two sugars put together. Now it's getting more complex.

And as it gets more complex, it actually gets harder for our body to digest. But that's not a bad thing. That's a good thing. This is what fiber is. Like I'm literally describing what fiber is right now. Because then ultimately, because it's hard for us to digest, it will get down to your gut microbes and they will digest it for you.

The issue that exists though, for people that have gut issues is that these things that are, I'll describe more like some of the categories of what they are, but they're fermentable. The problem that exists for the person who has gut issues is that their gut is damaged. And because their gut is damaged, it is struggling to process and digest these foods that you need your gut to process.
