You want to hear that little sizzle.
And then just give the pan a little shake and you're going to cook it for about three to four minutes on like a medium heat.

And I just like to have a tray beside me lined with a bit of parchment paper.

Then you know it's perfectly cooked.

You've seared off the both of them.
It's time to make the sauce.
The rest of the butter goes into the pan.
In with the shallots.
Saute them off at no colour.
In with the brown shrimp and the rest of the butter.
Keeping on shaking the pan.
And then the squeeze of those two lemons.
Salt and pepper.
And that's a very basic pan sauce.
That's perfect with salmon here.
