That held me back a little bit.

I learned that lesson fast, so.

I agree.

There's a certain confidence, and you put yourself out there, too.

The cooking I'm doing now.

You know, you're a bit vulnerable.

Mm-hmm.

For me, I was so young.

And most of the students were over 21.

So they would go party on the weekends.

Yeah.

And I was just...

I would have been like, oh, I'm in New York.

So originally, I went back to a hotel in Grand Rapids, the Amway.

And the chef that was running the hotel, he became a mentor.

And upon graduation, he was like, come back for a couple months and we'll find a spot for you in Europe.

And we'll apprentice over there and learn and blah, blah, blah.

So I went back to Grand Rapids and it never worked out.

So then I just went on a big search.

I wanted to work for the best chef and the best restaurant.
