But the first location that was actually like my own location that I scouted personally, that I opened personally from start to finish, like talking to the landlord, everything, was our East Village location on St.
Mark's.
And that was a location I worked at
pretty much every day for at least a year.
And that's where I learned the most about the business.
And what did you learn in that location?
Learned every dish, learned how to open and close everything, learned how to talk to people.
That was when I came out of my shell.
I'm actually a pretty shy person.
Back then, I'm more, I wouldn't say bookish, but, you know, I'm not known for being very outgoing, charismatic in terms of talking with strangers, maybe people I know, but...
when you're a cashier and you're meeting hundreds of people a day, and there are nice people and there are going to be difficult people, you have to be able to deal with all of them.
And that was a great sort of training ground for me back then.
And of course, the kitchen side, working with employees, that was when I actually hired people.
And at that point, it was like, we can't hire people who are only Chinese speaking.
We need people who can speak English as well.
So it really became sort of critical for me to expand from just the Chinatown business to
a New York business.
It seems really hard to imagine.
Yeah, no, it's stressful.
A lot of arguments I don't even remember anymore because there are so many.
